After deciding to close for the winter, The Cedars is ready to reopen doors to the bar and restaurant on Friday, Feb. 21 at 4 p. m.
Provided with a perfect winter Wisconsin scene overlooking a frozen Cedar Lake, customers will be able to grab a chair and dive into an exciting new menu.
A familiar faces is back at the helm in the kitchen as Nate Paulish rejoins the staff at The Cedars.
Paulish, who has 18 years of culinary experience in the Sheboygan and Manitowoc area, is excited to bring some new things to the menu.
He said, “I’m excited to be back. The Cedars is such a beautiful setting and I’m coming back with some new ambitions for the menu that I think people are really going to enjoy.”
Owners Ray and Debbie Brickner are also excited to have Paulish back in the kitchen. “Nate is from this area and understands what our customers are looking for at The Cedars,” Debbie said. “We are confident in his creative ability and he has some great things in store for the menu.”
Before dinner, customers will get to know Jacob Schiessl who is now overseeing the new variety of Wisconsin craft beers and specialty drinks behind the bar.
The reopen of The Cedars comes a new menu filled with fresh ingredients.
Fresh seafood flown directly from the east coast and gulf shore will offer a variety of new flavors throughout the year.
“Our focus is on using fresh ingredients, no matter if it’s seafood or vegetables. Everything is prepared right here in our kitchen,” Paulish said.
The new menu will also feature steak options and specialty pasta dishes for dinner.
Paulish enjoys exploring different cajuns styles of cooking as well as utilizing his experience in French and Italian cuisine. The menu will feature specialty dishes that will rotate often throughout the year.
“We are excited to create a menu that features some different dishes and I look forward to the feedback from our customers,” Paulish said.
The Cedars will also feature custom pizzas, paninis, and hot sandwiches made in a stone oven.
“The menu is something we hope the lake community will be excited about. They deserve it,” Paulish said.
Hours will be in a transitional phase throughout the spring season leading to the warm summer months.
When the doors open on Feb. 21, The Cedars will only be open over the weekend from Friday through Sunday. Friday hours will be 4 p. m. until bar close. Saturdays and Sundays will open for lunch beginning at 11 a. m. until bar close.
“We will be taking the spring to play with our lunch schedules to find out what works best for us,” Paulish said.
On Wednesday, April 16, The Cedars will be open weekly from Wednesday through Sunday. Hours on Wednesday, Thursday, and Friday will begin at 4 p. m. until bar close. Saturdays and Sundays will open for lunch beginning at 11 a. m. until bar close.
